.019. it's raining, it's pouring, inside?

Tonight I had a girls' night out with my mom. I love having these nights. It gives my mom and me some time to catch up and talk girly things. Tonight we ate at Carrabba's because we love Italian! Then, we headed over to Masters Cinema, which is the $2 movie theater in Augusta. They don't have the new releases, but they have the movies that have been in theaters a while. We went to see The Last Song. Mom and I both read the book. Well, I read the book and Mom listened to the audio book that my Secret Pal had gotten me while she drove to work. The movie was pretty good, but it was like a movie and a stage show in one. 

In the middle of the movie, one of the ceiling tiles comes crashing down with a SPLASH! The people that were sitting around it popped up like they were sitting on springs. It didn't land on anyone, but it was close. After the initial splash, it continuously streamed through the ceiling for the rest of the movie. Then, the tile next to that one decided to be a copy cat and do the same thing. This one was a little more theatrical because it began with a SPLASH! then, after we were all engrossed in the movie again, we heard a PLOP! The final piece of the ceiling tile had fallen. As we sat watching the rest of the movie, praying for the movie to end before the ceiling tiles above our head decided to give way, we watched the steady stream of water and the movie in the background.



On our way out of the theater, the manager is standing there handing Admit One tickets as she profusely apologizes for the "ceiling collapsing on us". What a way to end an interesting evening! But hey! We get to go back to see Sex and the City 2 for FREE! Yes! I'm so glad I get to save the $4!



I guess you all have gathered that a pretty bad rain storm must have come through in order for the rain to enter the building, right? Well, on the way home, the sky looked interesting, to say the least. I had taken my camera with me so I could get some shots for my blog, so at every red light I'd try to get pictures of the sky. Below is the best I could get. Kinda artsy?

.018. enchilada

I didn't get to make my Shrimp Fried Rice last night because the shrimp had been in the fridge too long. So, it had to go in the garbage. Tonight, I made Enchilada Casserole. I have to admit, I've done better. I think I need to tweek this recipe. Overall, it's a good recipe; however, I think I should substitute the enchilada sauce for Mexican style stewed tomatoes. The enchilada sauce had a funny taste to me. Michael seemed to like it though. I did add ground beef to the recipe because we're not vegetarians over here!

Here it is! It sure looks yummier than it tasted. Maybe I'll have to tweek the recipe and then post a new picture. 

I'm going to post the recipe, as is, from the cookbook. I'm taking it from the Miracle Foods Weight Watchers cookbook.

Enchilada Casserole

Cooking Spray
1 (10 ounce) package frozen southwestern style corn and roasted red peppers, thawed
1 (19 ounce) can black beans, rinsed and drained
1 teaspoon salt
1 (15 ounce) can red enchilada sauce, divided
13 corn tortillas, cut in half
1 1/2 cups (6 ounces) reduced fat sharp cheddar cheese
1/2 cup fresh cilantro
1/2 cup fat-free sour cream

1. Coat a medium skillet with cooking spray; place over medium-high head until hot.{This is where I added onions and ground beef} Add corn mixture, and cook, stirring constantly, 3 minutes. Add black beans and salt; cook, stirring constantly, 2 minutes. Remove from heat; set aside.

2. Spoon 1/3 cup enchilada sauce over bottom of 13 x 9 inch baking dish; spread evenly. Arrange 8 tortilla halves over sauce. Spoon half of corn mixture over tortillas; sprinkle with 1/3 cup cheese. Repeat layer with 8 tortilla halves, remaining corn mixture, and 1/3 cup cheese. Top with remaining 10 tortilla halves. Cover with remaining enchilada sauce and remaining cheese.

3. Cover and back at 400 degrees for 20 minutes. Uncover and back 5 minutes or until bubbly. Let stand 10 minutes. Sprinkle with cilantro and serve with sour cream. Yield: 8 servings.

Let me know if you try it. I'd love to know your opinion on this recipe. I think it's a great idea, just needs a little work on the implementation.

"Were you in a pageant today?"

I love little people! This is why I chose to become a teacher. I walked into clogging tonight and one of the little ones whose Mama is in my class said, "Were you in a pageant today?" I assume she asked this because of my new hair. See, it's having an impact already! I went back and forth with her for a little bit and then I asked, "Do you think I won?" and she said "Yes!" Ahhh...how little ones can make a day just absolutely perfect, even if I really didn't win a pageant today! *smiles*

.017. perm{anent}

I told y'all last night that I thought Lexi may have a urinary tract infection. I'm sure if Lexi was human and she knew that I was sharing this information with the entire virtual world, she would be humiliated. Lucky for her, she is a canine companion that thinks she's human. Well, after I wrote my blog, I decided to check her out. Now, I do not like ticks. They are nasty and yucky, so I try to check her periodically because we do live amidst a pine tree forest. Well, evidently one little booger escaped me and he wound up in a very uncomfortable place for Lexi. After removing the little invader, Lexi has felt much better! Glad to have saved my $100 and helped Lexi out.

This morning, feeling much better relaxing with Grandpa Bear!

On a funnier note...I made my bed this morning and then went to get ready to head to Greenwood for my perm. When I walked back into my room to get dressed, this is what I found...
I felt like Goldilocks. "Who has been sleeping in my bed?" Are y'all wondering who is under there? I bet a few of you could guess. But, it's Sophie! She must not have been ready to get her lazy tail out of bed, so she just made her way under the covers. I did enjoy my Goldilocks moment though.

Now, drumroll please, my new hair!
Whatcha think? I think I love it! I can't wash it or really play in it for 48 hours, but I think it's cute! Ashley, a student at Charzanne Beauty College in Greenwood and a girl that is in my clogging class, did it. I must say, she did a fabulous job! Thanks Ashley! :)

I am really on top of things today. It's not even 5 o'clock and my discussion question is done for the week, my blog for today is about to be posted, and the dishes are done (Happy, Mom?)!

Time to cook some supper! Shrimp Fried Rice, anyone?

.016. i dunno

I really have no idea what to tell y'all about this evening. I did have a Thirty-One party tonight. Oh, how I do love to go to my Thirty-One parties. They are so much fun. And tonight, I had a ball with Barbara's friends. We played games, chatted, and looked at great Thirty-One products. Now, that's what I call a good time! :)

It looks like Lexi may have another urinary tract infection, not fun. Which means, I'm going to have to spend at least $100 at Lincolnton Animal Hospital tomorrow. Oh joy! When she gets these infections, she will plop her hiney down abruptly. So, today, when I would let her out, she would run out there door and immediately plop her hiney down in the grass. This is a sign she may have a urinary tract infection. Why are dogs so expensive? Ah yes! Because it is almost like having a child. I do consider Lexi my baby, my daughter, so, as a good parent, I will be taking her to Lincolnton Animal Hospital in the morning. Which means, I have to get up extra early, let's say 8. And yes, on Summer time, that is early. And I will hike over to Lincolnton to get her peepee tested and her some antibiotics. Then, I have to make my way to Greenwood tomorrow for my harir appointment at 1. Yes, I was able to squeezed in somewhere else to get the perm that I missed on Monday (yesterday, right?).

Artistic, maybe? Or just plain blurry.

Well, I guess I did have more to share than I realized. Anywho...I will update y'all tomorrow on my baby, Lexi.

.015. today is?

Just so everyone knows, today is Monday, June 21, 2010. I was unaware of this fact until about 4:00PM, just in time to remember that I had missed my appointment to get my perm, which was at 1:00PM. Why couldn't I have remembered earlier? I think summer is beginning to catch up with me. Since school is no longer in session and I am no longer writing the date on the whiteboard daily, I have no idea what today is. So, I have no perm, but I do know what today is now. To put the icing on the cake, Mom had asked Michael if they were going to go to the dump today (since we don't have trash pick-up). Michael said no, but I chimed in and said "Today is Sunday!" Oh lordy! This was AFTER I had already gone through the whole ordeal of missing my appointment. I think it's time I invest in a calendar that I can tape to my forehead so when I look in the mirror in the morning, I'll know what the day is.

All of that to share that I created a flier today. I'm rather proud of my flier. I think it turned out pretty good. Just in case my blog readers were not already aware, I am having a Mystery Hostess Party. We also had a pretty amazing dinner. We had rice pilaf (my version), grilled squash an zucchini, and grilled mahi mahi. Talk about a yummytastic dinner?! That's it! I took a picture for all of you to drool over. Enjoy!

I had all intentions of updating yesterday's and today's blogs this evening; however, my brother had different plans. I shall update in the morning! I have pictures ready for y'all, just gotta write and post!

~UPDATE~

This morning, Michael cooked breakfast. Yummy! Breakfast is my favorite meal of the day. I love most any type of breakfast foo. Bagels, English muffins, Eggs, Bacon, Sausage, Fruit, Toast, Cereal, Spam, Grits, and on and on... Y'all know what Grits stands for right? Girls Raised In The South. That's me! Michael fixed eggs, bacon, grits, and toast. It was delicious! The right way to start off a beautiful Sunday morning!

After our delicious, stick to you ribs breakfast, we headed over to Michael's to pick blackberries. Michael was set on having a blackberry cobbler. We all got a bucket and went to pickin'. We wound up with quite a few blackberries, but the cobbler went kapooey, so it wasn't the best.

Some blackberries aren't quite ripe yet, so I guess we'll get another chance to make the blackberry cobbler just right!
